The perfect low calorie diet friendly meal!

***Chilli Lime Chicken with a yoghurt dipping sauce***
3tbsp chili powder
2 tbsp extra virgin olive oil
2 tsp lime zest
3tbsp lime juice
3 garlic cloves, crushed
1 tsp ground coriander
1 tsp ground cumin
1 tsp cayenne pepper
A pinch of ground cinnamon
4 skinless chicken breasts, about 100g each
Sea salt and freshly ground black pepper
Steamed vegetables to serve
For yoghurt dipping sauce:
400g low-fat yoghurt
½ cucumber, diced
3 spring onions, sliced
1 handful of fresh mint leaves, finely chopped.
- Start preparations the evening before. Combine the chilli powder and oil in a small bowl with the lime zest and juice, garlic, coriander, cumin, cayenne pepper, cinnamon, and salt and pepper, to form a wet paste. Generously smear this spice, rub all over the chicken, then cover and chill overnight.
- When you get home from work the following day, heat the oven to 200 degrees/Gas 6 and put the chicken into a roasting tin. Cook in the oven for 30 minutes or until the chicken is cooked through.(Alternatively, cook in a griddle pan.)
- To make the dipping sauce, mix the yoghurt with the cucumber, spring onions and mint. Serve with the chicken and steamed vegetables.
