A Super Salad

Summer is almost upon us, so why not throw a delicious, summery salad into the mix? We've championed broccoli in this recipe, a great source of vitamins, iron and calcium.

Ingredients
Serves 4

For the salad
1 broccoli head, cut lengthways into 8ths
1 tbsp harissa
1/2 lemon, juiced
1 tsp smoked paprika
1 tbsp olive oil
Salt and pepper
1 tin chick peas, drained
1 tsp cumin seeds
1 garlic clove, minced
1 bag rocket and watercress

Optional: toasted flaked almonds

For the dressing
1 tsp harissa
1/2 lemon, juiced
1 garlic clove, minced
2 tbsp low fat yoghurt
Salt and pepper

Pre-heat your oven to 200 degrees. Cut the broccoli lengthways to make long stalks, almost like tenderstem broccoli. Keep the stalk on, it's still good to eat!

Add the harissa, lemon juice, oil, smoked paprika and salt to a bowl along with the broccoli and mix well so that everything is well covered. Spread the broccoli evenly over the baking tray. In another bowl, mix the chickpeas with cumin seeds and a little oil. Season, mix and then sprinkle over the baking tray with broccoli on. Roast the broccoli and chickpeas for 15 minutes.

Whilst your broccoli is roasting, you can make your dressing. To a bowl add the yoghurt, garlic and lemon juice. Season with salt and pepper then mix everything together.

To serve, mix the broccoli, chickpea and salad leaves together then drizzle over the dressing. If you want to take it to the next level you can sprinkle over some toasted flaked almonds.
