
Avocado Alternative
Eating too many avocados? As an avocado alternative, try our delicious pea puree instead!
Serves 4
1 (900 g) package frozen peas, thawed in microwave about 5 minutes
6 sprigs fresh mint, leaves and softer stems only
3 cloves garlic, peeled, roughly chopped
200 g of low fat yoghurt
1 tsp salt
Throw all of the above into the food processor and blend until almost smooth but with a little bit of a chunky texture. For a smoother texture, add more yoghurt. Spoon onto toasted granary bread and enjoy!
