Diet Plan Friendly Leftovers
Use up those leftovers with this fresh and healthy Asian Turkey and Rice Noodle Salad recipe...
Not only is this salad low in fat and calories, it's a welcome break from rich food! Why not give it a try for yourself?
100g dried thin rice noodles
500g leftover turkey, shredded
1 red chilli, seeds removed, thinly sliced
2 carrots, shredded
1 small white cabbage, washed and finely shredded
1 small red onion, thinly sliced into half moons
handful coriander leaves, roughly chopped
handful mint leaves, roughly chopped
For the lime-chilli dressing:
2 tbsp fish sauce
2 tbsp light brown sugar
juice 4 limes
1 garlic clove, crushed
How to cook:
Pour boiling water over the noodles and allow to sit for 5 mins. Drain, rinse under cold water and put in a large bowl, along with the turkey, chilli, carrots, cabbage, onion and herbs.
To make the lime-chilli dressing, mix all the ingredients together in a small bowl or a screw-top jar. Pour dressing over salad, and mix well.
Jane Plan Tip: Lots of other crunchy vegetables work well with this recipe, try adding sliced cucumber, mangetout or beansprouts.
