Easy vegetable frittata

This recipe is simplicity at it's best. Nothing complicated to do or add, just healthy, whole ingredients used to create a nourishing frittata. Enjoy for breakfast, lunch and dinner.

Ingredients

1 red onion, finely sliced

1 red pepper, sliced

6 eggs

100ml sem-skimmed milk

1 tsp salt

1/2 tsp cracked black pepper

1 handful spinach, chopped up

1 tbsp sunflower seeds

Method

Preheat your oven to 200 degrees and once at temperature, roast the peppers and onions for around 12 minutes. Whilst they are cooking, whisk up your eggs, milk, salt and pepper and set aside. Remove the veggies from the oven and spread over a greased, circular dish with a depth of around 7cm. Add the spinach and then pour over the egg mixture. Sprinkle over sunflower seeds and roast in the oven for 25 minutes or until golden.

Perfect with a side salad or avocado mash for breakfast.
