Grilled asparagus & fine bean salad
These go straight onto the grill. No messing around, just a tasty dressing to compliment the woody flavour from your BBQ.
200g asparagus, ends removed
200g fine beans, stem ends removed
1 tbsp extra virgin olive oil
1 tbsp capers, finely chopped
These can go straight onto the BBQ, no need to add oil! It is best to create a foil tray for the beans or they can fall through the grill. Grill the veg until it has started to blister and darken, this should take less than 10 minutes.
Once everything is off the heat, spread over a serving dish. Sprinkle over salt and pepper to season, then drizzle over the oil. To finish, zest lemon over everything and sprinkle over the capers.
