Lamb, squash and pomegranate salad

This recipe is perfect for sharing with family and friends. Best practice is to marinate this lamb for a day, but if you only have a few hours to do so this is fine!

Serves 8

For the marinade;

6 garlic cloves, minced

2 tsp ground cumin

1 tsp coriander

Juice of 1 orange

1 tbsp olive oil

1 tsp salt

1 tsp cracked black pepper

1 red onion, chopped

1.5kg lamb shoulder

For the salad;

1 tub pomegranate seeds / 1 pomegranate

1 butternut squash, cubed

1 bag rocket

2 avocados, diced

 

Mix the garlic, coriander, cumin, orange juice, olive oil, salt and pepper together and rub into then lamb before leaving to marinate in the fridge. Remove from the fridge 1 hour before cooking and preheat the oven to 160 degrees. Lay the chopped onions on a tray and cover with the lamb, basting it with the leftover marinade. Cover with foil and cook for 4 ½ hours. Roast the squash chunks for the last 25 minutes of cooking time on a separate tray.

Once the lamb is out of the oven, move it onto a separate tray and pour its cooking juices into a saucepan. Add a tablespoon of honey and add any leftover pomegranate juice into the pan then leave to simmer and reduce for 15 minutes.

Pull the lamb meat away from the bone and shred. Add to a bowl with rocket, avocado, butternut squash and pomegranate seeds. Drizzle over the dressing and enjoy!
