Little Gem Tacos!

Our take on a Mexican classic - tacos! Instead of using corn tortillas to encase the filling, we’ve used little baby gem lettuce cups. This recipe is packed with fresh flavours and will leave you feeling full and satisfied.

Serves 2

Ingredients

1 tbsp olive oil

1 pepper, sliced

1 red onion, sliced

1 clove garlic

1 tbsp tomato paste

1 tsp cumin

¼ tsp chilli (optional)

1 tsp smoked paprika

1 tsp oregano

1 tsp ground coriander

½ tsp salt

100g turkey mince / tofu

100g sweetcorn

100g mixed beans


To serve

Little gem lettuce, cups removed

Cherry tomatoes, halved

Carrot, grated

Red cabbage, sliced

Coriander leaves, chopped

Lime

Fat free yoghurt

Sriracha


Heat 1 tbsp oil in a large frying pan and add the red onion and pepper. After 3 minutes of frying on a medium heat, add the garlic, tomato paste, salt and spices then cook off for a further minute before adding 100ml water. You can then add tofu or turkey, depending on your preference, along with the sweetcorn and mixed beans and then leave this to cook until the turkey is browned. Check your seasoning and add more chilli or salt if required.


To serve, load little gem leaves with the taco filling and top with grated carrot, sliced red cabbage, cherry tomatoes, chopped coriander, a dollop of fat free yoghurt, a squeeze of lime and a drizzle of sriracha (if you like it spicy). Enjoy!


This recipe is approximately 340 calories per serving. Avocado is a welcome addition to tacos and half an avocado adds around 140 calories.
