Nourishing Asian broth recipe

This dish is fresh, tasty and packed with nourishing ingredients. The great thing is it only takes 10 minutes to whip up and you can swap in your favourite vegetables to really make it your own.

Ingredients
Serves 2

1/2 tbsp sesame oil
1 red onion, sliced
5cm square piece of ginger
2 cloves of garlic
2 tsp miso paste (available at most supermarkets)
2 tbsp dark soy sauce
600ml vegetable stock

1/2 courgette, cut into moons
1 pak choi bulb, quartered
5 mushrooms, sliced
1 carrot. cut into thin batons
3 tbsp sweetcorn
1 noodle nest

1 lime
Chopped coriander
Sesame seeds

Method

Add your sesame oil to the pan and heat before frying the sliced red onion. Once the onions have started to soften you can add the ginger and garlic. These only need a minute in the pan before you add the miso paste, soy sauce and stock. Simmer for 2 minutes and then add the rest of your vegetables and the noodles. Once your noodles are done it's ready to serve! Sprinkle over chopped coriander, a wedge of lime and sesame seeds to finish.

A boiled egg, 50g tofu or chicken are great ways to add protein into this meal and will add around 80 kcal to your meal.
