Our seasonal squash tray bake
Pumpkins are all around us at this time of year, and so are pumpkin recipes. But let's not forget about seasonal squash! At Jane Plan we love using butternut squash in our recipes and so thought it only fair to share one our favourite autumnal dishes to make at home yourself.
Butternut squash tray bake
This recipe is super easy and you can chuck everything into a big roasting tray together, meaning less washing up. It's great served with meat, fish or alone as a meat free main dish. And, the really good news - per portion it's only about 160 calories.
1 butternut squash - diced
1 large red onion - cut into chunks
1/2 celeriac, skin removed and diced
1 tbsp olive oil
Salt and pepper
2 crushed garlic cloves
1/2 teaspoon of dried oregano
3 sprigs of rosemary (remove the stalks)
1 tbsp pumpkin seeds
2 handfuls of rocket
1 avocado, chopped into chunks
Preheat oven to 200 degrees
Add the squash, onion and celeriac to the roasting tin, drizzle over the oil, the garlic and the herbs and season well. Use your hands to make sure everything is mixed together. Roast for 20 minutes until golden and in the last 5 minutes throw in the pumpkin seeds.
Serve with the rocket and avocado, mixed in, season with cracked pepper and optional chill flakes.
Top tip, if you're going meat free, add brown lentils (cooked in vegetarian stock) for extra protein. Per 100g this will add in an extra 120 calories.
