Pancake Day the Jane Plan Way

Happy Pancake Day! If you're dreaming of an indulgent Pancake Day, we aren't here to stop you! Here are a few tips and tricks to make your Pancake Day a Jane Plan friendly one!

Buckwheat Lemon and Poppyseed Pancakes 

  • 1 lemon (zest and juice) 
  • 2 tbsp poppy seeds
  • 1 tsp vanilla 
  • 350g natural yogurt (low-fat)
  • 1 small banana (mashed)
  • 1 egg 
  • 100g buckwheat flour
  • 1 tsp baking powder 
  • 4 tsp honey 

Mix lemon, vanilla, yogurt, banana and the egg in a large mixing bowl.  Add flour, baking powder - mix until well combined. Heat a medium non-stick pan and add 2 heaped tbsp onto the pan. Cook until both sides a lightly golden.

Serves: 4
Calories: 230 per serving 

Banana Pancakes 

  • 2 ripe bananas (mashed)
  • 1 tsp vanilla 
  • 2 eggs 
  • 70g quick-cook oats
  • 1 tsp cinnamon

Mix bananas, vanilla, cinnamon and eggs until combined. Next, add oats and mix. Heat a medium non-stick pan and add 2 heaped tbsp onto the pan. Cook until both sides a lightly golden 

Serves: 4
Calories: 184 per serving 

Spinach and Feta Pancakes 

  • 4 large eggs 
  • 1-2 handfuls of spinach  
  • feta cheese 
  • tomatoes chopped 
  • pine nuts (topping) 

Whisk eggs together. Mix half of the spinach, feta and tomatoes into the egg mixture. Heat a medium non-stick pan and ladle mixture to cover pan and cook. Add the rest of ingredients and pine nuts to top  

Serves: 4
Calories: 280 per serving 

Topping Suggestions
Fruit - Berries or fruit of your choice would be a great option 
 Natural Yogurt - For something creamier, a natural yogurt (low-fat) will provide a creamy taste  
 Nut Butter - Drizzle some nut butter for a rich nutty flavour
Honey - If you're looking for something sweeter
Coconut Flakes or Nuts - Great to add if you are looking for some crunch
