Schools Out for Summer!

School’s out for children across the country, and they have two months of leisure time before school starts back up again. Along with schedule changes, their meals and snacks tend to change too!

Eggs
Not sure what to have as a delicious family breakfast? Eggs are a great way to start the day, as they are packed with protein, vitamins and minerals. You could make an omelette filled with a mix of vegetables, or serve poached with spinach and mushrooms. Hard-boiled eggs are also a great addition to a salad or as a snack on the go!

Salad Pots
The perfect addition to a picnic or as a snack and an easy way to increase your daily intake of fruit and vegetables. To prepare simply wash and chop up some raw vegetables such as carrots, cucumber, bell peppers, radishes and tomatoes. 

Chicken and Vegetable Skewers
Chop chicken into small pieces and marinate with mixed herbs and spices of your choice. Thread the chicken onto the skewers, alongside pieces of pepper, cherry tomatoes, courgette and vegetables of your choice. Griddle for 10 mins, turning halfway.  You will love these chicken skewers hot off the griddle for a quick supper, or pack them with a green salad and tzatziki to take on a picnic. 

Fruit Salad
Whip up a fresh fruit salad for as a light dessert or snack. July is high summer, with a variety of fruits in season, these include; apricots, blackberries, blueberries, cantaloupe, kiwi, mangoes, peaches, plums, raspberries, strawberries and watermelon.
