Seasonal Recipes This Autumn

It's that time of year again, the days are getting shorter, the cold weather has driven us all inside, and we begin to crave hearty, comforting food. This doesn't mean we have to ditch all of our good habits - comfort food can be healthy without being calorie-laden!

Cinnamon, Apple & Date Porridge
Serves 4
 Ingredients:
100g  rolled porridge oats
2 apples (roughly 350g) - peeled and coarsely grated
1 tbsp of ground cinnamon
750ml of semi-skimmed milk
4 Dates, roughly chopped 

Method: 
- Add the oats, apple, dates, and milk to a pan.
- Cook over medium heat, stirring regularly for around 5-10 minutes until the oats are cooked and apple is soft
- Stir in the cinnamon, serve and drizzle with a little honey
 
Pumpkin soup with crème fraîche and  chilli
Serves 4
Ingredients:
1kg pumpkin - peeled, deseeded and chopped
2 tbsp olive oil 
1 large onion (2 Small), chopped
1 red pepper, deseeded and chopped
1 garlic clove, crushed
850ml vegetable stock
2 small red chilli (deseeded and finely chopped)
4 tbsp of low-fat crème fraîche

Method:
- Heat the oven to 200C, add the chopped pumpkin to a roasting tin with 1 tbsp olive oil, salt and pepper. Roast for 30 minutes
- Heat oil in a pan, add the onions, pepper, garlic and 1 chilli. Fry until softened for around 15/20 minutes. Then set to one side.
- Add all the cooked ingredients together with the stock and blitz using a stick blender or a food processor until thick and silky. 
- Serve in bowls with a swirl of crème fraîche and if desired, sliced chilli.
 
 
Autumn veggie tray bake
Serves 4
Ingredients:
- 2 tbsp Olive Oil
- 400g parsnips - peel and slice lengthways
- 400g carrots - peeled and sliced lengthways
- 200g beetroot - Chopped 
- 1 large onion - Chopped
- 2 cloves of garlic (sliced) 
- 1 clementine


Method: 
- Heat the oven to 200C
- Add veggies to a large roasting tin, drizzle with 1 tbsp of oil and a sprinkle of salt. Place in the oven for 15 mins
- Meanwhile, slice a whole clementine (with skin on)
- After 15 minutes, remove the veg from the oven, stir and add slices of clementine to the roasting tray
- Roast for a further 15-20 minutes until everything is cooked and caramelized.
