Slow red peppers

Once BBQ'd, these peppers develop a deep, sweet flavour which is sure to delight any tastebud. These ones are spiked with oregano and garlic.

Ingredients
Serves 2

2 large red peppers
1 handful fresh oregano
2 garlic cloves, finely sliced
1 tbsp olive oil
1 tbsp red wine vinegar
Flaked salt
Cracked black pepper.

Method

To prep the peppers, simply cut a hole in the top and push a generous helping of oregano into each pepper, along with the sliced garlic. These can go straight onto the BBQ to char, blister and soften. Once your peppers are blackened, they are ready to take off the heat and cool. Leave for around 15 minutes until you are able to peel off the black skin, revealing the soft flesh underneath. To serve chop more oregano and sprinkle over, along with a drizzle of olive oil, red wine vinegar, salt and pepper. A simple but effective prep for peppers.
