
The World's Best Chilli Con Carne
Hearty and healthy - with a little bit of a kick, Chilli con carne is an all time family favourite. Our very own Jane Plan Chilli is a best seller - slow cooked to perfection by us, and ready to heat and eat by you (it only takes 3 minutes).
And like all Jane Plan recipes, our famous Chilli con carne began at my kitchen table. And today, I am sharing the original recipe, so you can create it in your kitchen - for you and your family.
Chilli con carne
Serves 4

Ingredients
1 tbsp of sunflower oil
1 large onion, finely diced
4 garlic cloves, finely diced
1 red pepper, de seeded and finely diced
1 heaped tbsp of chilli powder - or more depending how hot you like it
400g of lean minced beef
300ml of beef stock
400g of canned tomatoes
2 tbs of tomato puree
1/2 tsp of dried marjoram
400g of canned kidney beans, drained
Method
Heat the oil in a large pan over a medium heat for 1-2 minutes
Add onion and cook for 5 minutes stirring frequently
Add garlic, red pepper and chilli powder
Stir well and cook for a further 5 minutes
Add minced beef - make sure you keep the heat hot enough so you brown the meat, as opposed to stewing it
Pour the stock into the pan, add the tomatoes, tomato puree and marjoram
Season and stir well
Bring to the boil, reduce the heat to low and simmer for at least 20 minutes
Add the kidney beans and simmer for 10 minutes - adding a little water if it looks too dry
Taste and adjust the heat - you can add more chilli here!
Cover the pan, turn off the heat and leave to stand for 10 minutes
If you are adding rice, you can cook this whilst the chilli is standing - 300 g of rice for four people is about right, and will add a further 282 calories per person. I tend to eat my Chilli con carne without the rice and instead top it with fresh chillies, chopped avocado, a dab of creme fraiche and a sprinkle of fresh coriander. This adds about another 90 calories and is so worth it - totally delicious!
