
Your April Food Guide
It's the start of a new month, and so as always, I've put together my seasonal food guide. April welcomes some lovely vegetables, which has revived my love for fresh, nourishing salads. Move over stews and casseroles.
Radishes are the perfect addition to any salad and are available from the start of April. These pair well with cucumber and a lemon and dill dressing.
Spring greens are as the name suggests, now in season. A great way to use this cabbage variety is in a slaw. I usually mix spring greens, carrot and red cabbage to mix through with fat free yoghurt, wholegrain mustard, balsamic vinegar and a dash of honey.
Asparagus has a relatively short season (April-June), so make the most of it whilst you can. Simply roast and season with salt, pepper and lemon. Delicious.
